FOOD AND CULTURE (HFC3M)
This course focuses on the flavours, aromas, cooking techniques, foods, and cultural traditions of world cuisines. Students will explore the origins of and developments in diverse food traditions. They will demonstrate the ability to cook with ingredients and equipment from a variety of cultures, compare food-related etiquette in many countries and cultures, and explain how Canadian food choices and traditions have been influenced by other cultures. Students will develop practical skills and apply social science research methods while investigating foods and food practices from around the world.

Feb. 23 - Today we went over food influences
Feb. 22 - Today we finished taking up the measuring and tools worksheets. Then we watched a video of cooking culture in the 1950s. Then you discussed various interesting foods that you have tried in small groups.
Feb. 19 - Today you did course selection.
Feb. 18 - Today we practiced our measuring and cutting skills - we made cookies, cut veggies and fruit and learned about Hummus.
Feb. 17 - Today you did your safety test. Then you started to work on the measuring, and tools and techniques work packages.
Feb. 16 - Today you completed the "A Rose by any other Name" worksheet. We reviewed knife safety and then you worked on test review for your test tomorrow.
Feb. 12 - Today you did your presentations on Safety at the Mandarin. Then you started to complete a handout identifying foods that go by various names. Then we watched an episode of the Big Picture called Eat This! and discussed the various ideas within. Safety Quiz on Wed.
Feb. 11 - Today you reviewed a chart on different food borne illnesses and completed a bacteria matching worksheet. Then you worked on a "Food Safety at the Mandarin" mini assignment.
Feb. 10 - Today we reviewed kitchen safety vs. food safety and you read through and signed the safety and sanitation handout. We went through the food safety presentation and you took notes.
Feb. 9 - Today we had pancakes for "Mardi Gras", "Shrove Tuesday", Pancake Tuesday" and we listened to mardi gras music:

Feb 8 - Today we went over the course outline and rules. I gave you an info sheet to fill out and return, we had a discussion about the super bowl and then I gave you a handout to try to patch different breakfasts with the place that they are most common.
